Overnight Oatmeal (Fed 2 for $1.70)

I LOVE this oatmeal.  Just throw everything in a jar before bed, and the fridge does everything for you.  Wake up with delicious oatmeal waiting for you!  I love this for the summer because you just eat it cold, right out of the fridge.  I send it with my husband to work, or put it in the kids lunch (just transfer to plastic instead of glass).  I made this in a small jelly jar, but for oatmeal lovers it can be made in a pint jar, just add a little more of each ingredient.  The first time you make it, you will figure out if you need to add more milk or less, depending on how juicy or thick you like your oatmeal to be!

Start by putting whatever fruit you would like in the bottom of the jar.  I used fresh peaches because we just took a trip to the peach orchard!  I put two small peaches in each jar.  Then add 1/3 C Milk in the bottom of the glass, along with 1/4 C Yogurt (I use greek yogurt, because that’s what I like).  You can use regular or flavored yogurt, whatever you like.  I use strawberry honey yogurt.  Stir these all together in the jar.  Then I like to add 1 tsp. chia seeds.  I use these because they are good for you, and I like the consistency of the seeds, in the morning they are delicious!  I found them in the bulk bins of my supermarket, I’m sure they have them at most stores.  I know they look like little bugs, but I promise they are not 🙂 Stir this to incorporate the seeds throughout.

Then add your oatmeal.  You want to use old fashioned oats, not instant oats.  I also buy these in bulk bins from the grocery store (cheaper!) Add about 3/4 C Oats, then top it off with milk.  Put the lid on, SHAKE it up, and put it in the fridge.  When you wake up in the morning, you will have delicious oatmeal waiting for you!

You can make many different kinds of oatmeal, depending on what your family likes.  Some other types I make are brown sugar & cinnamon, apple cinnamon, blueberry, strawberry, strawberry & banana, peanut butter & banana.  If you are making one with banana, just add the banana in the morning so it doesn’t get mushy!  This will stay good for several days (not including banana variety).
