Vegan Corn “dogs” (Fed 3 for $2.53)

These Vegan Corndogs are delicious, and no one would even know that they weren’t meat, unless you just want to brag 🙂  These are a great lunch for kiddos, a good appetizer, or game-watching food!

Preheat oven to 375 degrees.  Mix together 3/4 C. cornmeal, 3/4 C flour, 1T sugar, 1 T baking powder, 1 T Olive Oil, 1/2 C Soymilk (I use almond milk), 1/4 tsp salt.  In a separate bowl, make one “egg” with your egg replacer and add to the mix.  I also took an ear of corn, cut all the kernels off and added it to the mix.  It added a veggie, and I LOVE cornbread with corn in it!

Grease two mini muffin pans, then fill them halfway with the mixture, then cut your “notdog” weiners up into bite-sized pieces (I cut the dogs into about 6 pieces per weiner) and place a weiner in each muffin cup right in the center.  Then fill the tins to the top with more corndog mixture.

Put them in the oven, preheated to 375 degrees for 20 minutes.

3/4 c. cornmeal $.50

3/4 c. flour $.15

1 Ear of Corn $.14

1 T Sugar

1 T baking powder

1 T EVOO

1 egg replacer egg

1/2 C SoyMilk $.75

1/4 tsp salt

2 “Not” dog weiners $.99
