So, I definitely didn’t have time to go to the store today. I looked through my fridge to see if I could come up with a meal without having to get out of the house. Because of that, I bring you the pizzadilla! It’s very easy, and fun for kids because they get to make it their own!
Take a tortilla, and layer it with shredded mozzerella cheese and pizza toppings. We used olives, bell peppers and onions. Put it on a pre-heated, greased skillet or panini press. Then take another tortilla and spread it with marinara. Lay it face down on the other tortilla. Either press the panini press (if using) or heat one tortilla until lightly browned and flip to brown the other side (just like you would a quesadilla).
For my gluten-free guy, I made his pizza on a gluten-free waffle that I made for breakfast the previous morning. He didn’t seem to notice because he gobbled it all up!
