This is yummy, and I put it in both my husband & sons lunch for tomorrow. This is something that you definitely wanna make the goop (you’ll understand) the night before serving, it’s SO much better that way.
Ok, for the goop:Cut up (I use scissors) 3 pieces of bacon and cook in a skillet. I like to cut it up before cooking because it’s more like bacon bits. Then put them in a bowl with 1/2 block of cream cheese at room temperature (4 oz.), 2 Tbsp. Sour cream, and 1/2 tsp. Ranch dip (powdered dip used to make ranch dressing). Then, after it’s mixed thoroughly, dice 1 Roma tomato, and fold into the goop. Do this gently, so you don’t mush up all the tomatoes.
Cut up 1 head of Romaine lettuce, and 1/4 onion (you can skip the onion if you think they are yucky :).
Lay out three tortillas. Put the goop on either side of the tortilla, and spread it out as best you can. I put it on either side so that it has filling in the center, but there is goop on the outside to seal up the wrap. Then put the lettuce right in the center of both goops, and onions (if using). The roll it all up, and save it for tomorrow (remember, it’s better?). I wrapped it in a paper towel, and foil.
