Sweet & Sour Chicken w/Fried Rice (Fed 4 for $4.86)

This is a very yummy, easy dish that both the kids and husband will enjoy.  So much better than any restaurant!  Ok, so it takes some work (do the chicken when husband is there to help out with kids), but trust me… it’s SO worth it!

I make my rice beforehand, because I like how all the flavors come together after it has been sitting a while 🙂 Then I reheat the rice on the stove once the chicken is almost done.

I bought the chicken breasts without bones, rinsed them, then cut them into chunks.  Turn a burner on the stove and put 1/4 C oil in a skillet for lightly frying the chicken.  Preheat oven to 350 degrees.Get two separate bowls, put 2 T cornstarch in one, and put two eggs in the other.  Scramble the eggs all up for dipping.  Dip each piece of chicken in the cornstarch first, then the egg.  Put the chicken into the oil and lightly brown each piece, don’t crowd the chicken 🙂  At this point, the chicken does NOT have to be cooked through, we are going to bake it!

While the chicken is frying, put the sauce together.  1/2 C Sugar, 4 T Ketchup, 1/4 C White Vinegar, 1 T Soy Sauce, 1 tsp Garlic Salt.  After the chicken is lightly browned on each side, dip each piece in the sauce and put them on a cookie sheet.  I put a rack (like a cookie cooling rack) ontop of my cookie sheet and put the chicken on it, because I like mine crispier, rather than mushy.  Do this with all the chicken, then put the chicken in the oven, baking at 350 degrees for 30 minutes, turning the chicken over after 15 minutes.

Then, add the chicken in with the rice, and enjoy!

For Sauce:

1/2 C Sugar $.60

4 T Ketchup

1/4 C White Vinegar

1 T Soy Sauce

1 tsp Garlic Salt

For Rice:

2 C Instant Rice $.54

2 Eggs $.33

1/4 Onion, chopped $.12

2 Carrots, sliced thinly $.10

1/2 C Frozen Peas $.25

2 T Soy Sauce

For Chicken:

2 Eggs $.33

1 lb. Chicken Breasts $3.12

2 T Soy Sauce

2 T Corn Starch $.07

1/4 C Oil for frying
