To make fried rice, I cook 2 C instant white rice (because I’m horrible at cooking long grain rice) the morning I am going to make the rice. Cook it according to the directions on the box. I do this because it is easier to add already made (cooled) rice to fried rice, without it getting all mushy. No one likes mushy fried rice.
I slice two carrots thinly, and put them in a skillet, along with 1/4 chopped onion, and 1/2 C frozen peas. Cover the veggies and cook them on medium heat until the carrots are as soft as you like them.
IF you are going to have vegan rice, skip this next part 🙂 If you are gonna have egg in your rice, take two eggs in a separate pan, and scramble them. Then add them to the veggie mixture. Add 2 T soy sauce and throw the pre-cooked rice in. Then reduce heat, cover, and cook until the rice is hot. Then, try not to gobble it all up!
This recipe is SO good the next day! You can also add other veggies, mushrooms, asparagus, whatever you like.
